(Easy Fried Chicken Recipes)

Barbecued Fried Chicken

2 – 3 lbs of chicken

¼ cup of Vegetable oil

2 tablespoons of Worcestershire

1 tablespoon of vinegar

1 tablespoon of brown sugar

¼ cup of ketchup

Dash of Tabasco sauce

Coat frying pan with vegetable oil and heat on medium flame. Once the oil is hot add meat and sauté until brown on all sides. Remove to shallow baking pan; mix together Worcestershire, vinegar, brown sugar, ketchup and Tabasco sauce in bowl then pour over meat. Bake uncovered in preheated oven at 350*F for one hour. Remove and pour remaining sauce over meat, makes about four servings.


Maryland Fried Chicken

2 – 3 lbs of cut chix parts

1/3 cup of flour

1 ½ teaspoon of salt

¼ teaspoon of pepper

1 egg

¼ cup of milk

1 cup of dried bread crumbs

½ cup of salad oil

First blend flour, salt and pepper together. Beat egg and add milk together in bowl. Begin with turning pieces over in this mixture until well coated. Next dip pieces in egg mixture; then roll in crumbs. Brown a few pieces at a time, in oil in large skillet. Turning occasionally, Remove after brown. When chix is all brown, put in preheated oven at 350*F for one hour, turn once or twice. If oven seems to dry meat during baking, add hot water about 2 tablespoons when pieces are turned.


Fried Chicken Curry

3 lbs breast

¼ cup salad oil

1 cup raw rice

¼ cup butter

¾ lb sliced mushrooms

1/3 cup minced onion

1 cup diced apples

3 tablespoons flour

2 teaspoons salt

1 ½ teaspoons curry

¾ cup milk

¾ cup chix stock

¼ cup minced parsley

Begin by sautéing breast in salad oil in deep skillet until light brown on all sides. Reduce heat, than cover and fry slowly for 30 – 40 minutes, or until tender, turning occasionally. Mean while cook rice of as directed on package. Drain; than place in shallow pan in oven of 300*F for 15 minutes. Melt butter in saucepan; add mushrooms, onions and apples, sauté until mushrooms are brown and onions tender. Stir in flour, salt and curry powder. Add milk and stock; heat, stirring, until thickened. Toss parsley with rice, than arrange in center of platter. Surround with breast meat; pour over curry sauce. Should make about four servings.


Southern Fried Chicken

2 ½ to 3 pounds chix, cut up

½ cup all purpose flour

1 teaspoon salt

½ teaspoon paprika

¼ teaspoon pepper

Cooking oil

Wash meat and pat dry. Mix flour, salt, paprika and pepper. Heat oil (1/4 inch) in large skillet. Coat pieces with flour mixture.

Cook pieces in oil over medium heat 15 to 20 minutes, turn occasionally to ensure evenly brown. Reduce heat; cover tightly and simmer 30 to 40 minutes or until thickest pieces are tender. Remove cover for last 5 minutes to crisp. Serves up to four.
