(Easy Tuna Recipes)

Tuna Casserole

2 cans tuna

2 tablespoons flour

½ teaspoon salt

Speck pepper

2 cups milk

1/3 cup sherry

1 cup broken up potato chips

2 tablespoons fish oil from can

Fish oil into double boiler. Gradually stir in flour, salt, pepper and milk. Cook over boiling water until smooth and thickening, stirring. Add sherry. Cover bottom of greased 1 ½ qt casserole with ¼ cup of potato chips. Top with 1/3 tuna, then 1/3 sauce. Repeat, making three layers; top with rest of potato chips. Bake, covered, in oven of 375*F for 20 minutes. Uncover; bake 10 minutes or until brown. Makes about four servings.


Tuna Steak with Wine, Tomatoes and Herbs

3 lbs fillet

1 teaspoon salt

2 tablespoons lemon juice

6 tablespoons olive oil

1/8 teaspoon pepper

1 cup minced onions

3 cups chopped tomatoes

2 cloves mashed garlic

½ teaspoon oregano

¼ teaspoon thyme

1 cup dry white wine

Cut fish steaks into serving pieces. Blend salt and lemon juice in bowl, the mix in the oil and pepper. Arrange the fish in the bowl. Cover with plastic wrap and marinate for 1 ½ to 2 hours. Remove fish and discard marinade. Sauté fish in olive oil for a minute or two on each side to brown lightly. Arrange fish in a baking pan and preheat oven to 350*F. Cook the onions slowly in a fry pan for 5 minutes or until tender. Stir in tomatoes, garlic, seasonings and herbs. Cook slowly for 5 minutes. The spread tomato mixture and wine over fish. Place aluminum foil over baking pan and place in oven for 15 – 20 minutes.


Curried Fish Casserole

2 tablespoons butter

1 ½ teaspoons curry powder

1 can (10 ½ ounces) condensed cream of mushroom soup

¾ cup milk

2 ½ cups cooked rice

2 cans fish, drained

1 can (8 ounces) whole onions, drained and halved

Heat Oven to 350*F. In large skillet, brown butter and curry powder. Mix in remaining ingredients; pour into ungreased 2 quart casserole dish. Bake uncovered 30 minutes. Top with curry condiments: sieved hard cooked egg yolks, chopped peanuts, currants, crab apple jelly, sliced green onions, crumbled crisply fried bacon. Makes six servings.
