Pork has been part of a daily diet in many parts of the world, from Europe to Asia. The pig has come far from being wild and hunted by tribes to being domesticate and becoming a staple of the farm and everyday life. When it comes to the world community, it is said that most eat everything but the oink. The loin, chops, shoulder, and ribs are roasted and braised. Sometimes the legs are cured for making various hams. Other parts, including the head, are transformed into sausages and salamis. Even the fat is used, or lard, and is used in cooking and baking. Lardo is the creamy pork fat directly under the skin, cured with herbs, and served in thin slices on bread, or chopped and used for larding meats and fish. The blood is used in sausage, and even the skin.

Suckling pigs are popular all over the world. Even roast baby pig is prepared either in an oven or on a spit. Many are seasoned with rosemary, wild fennel, garlic, and black pepper, and then usually spit roasted. In southern Europe this flavorful cooked pig is sold by the slice at open markets.

Wild boar in the past freely roamed the European countryside in great numbers. Nowadays, however, they are farm raised in a combination of free range and confined areas. There are many kinds that are sold at Butcher shops. The youngest, at three to six months of age. It is quite tender and mild in flavor and is ideal for grilling and roasting. At 6 to 12 months of age, is also tender but is strong in flavor and sometimes calls for a light marinade. The one to two years of age as a pronounced gamy flavor and requires longer marinating. Finally, the oldest, which are up to six years old, are highly gamy and call for a strong and lengthy marinade and a robust sauce.
